If you’ve lived in China long enough, you’ll know that crayfish are a big deal, especially this time of year. But did you know that a huge number of the spiky, pinchy little guys come from one place before they reach your plate?
That place is Qianjiang, where they export 700,000 tons of crayfish every year. That’s 60% of the crayfish enjoyed around the country, meaning 6 out of 10 crayfish you’re eating come from Qianjiang in Hubei province!
